With a decade of experience in Sake restaurant in Double Bay and Rocks Jungbae brings a deep-rooted understanding of Japanese cuisine shaped by discipline, precision, and respect for tradition. Over seven years in leadership roles as Head Chef and Executive Chef, he has led kitchens with clarity and consistency, refining both technique and team culture in high-end dining environments.
Now at AORI, Jungbae continues his journey with a focused and contemporary approach — crafting menus that are thoughtful, refined, and driven by purpose. His cooking reflects a quiet confidence, where simplicity meets depth, and every detail is intentional.

Chef Yusuke AOKI has over 10 years of experience in sushi, beginning his culinary journey in Tokyo.
He spent three years at NOBU Sydney, refining his skills in high-end, contemporary Japanese dining.
Passionate about quality, he regularly visits markets to source the freshest seafood and ingredients.
As a head chef, he leads his team to ensure not only exceptional sushi but also smooth service.
He focuses on optimizing operations and timing to enhance the overall dining experience.
At AORI Japanese Restaurant, he combines traditional Edo-style techniques with creative innovation.
